Perhaps it just goes to show that the Joad's and all the other farmers of the Dust Bowl aren't very civilized compared to the way we are. After all they do have poor grammar and no little about technology except for what Tom and Al knows about cars.
....Or the animals could symbolize the deaths that occur during this time. Maybe....

I agree with Kitsune, I think that these animals deaths are just to give off the morbid feelings of the time. The turtle was symbolism and maybe some of the other "animal deaths" were but i think its just to show the prevelance of death in the Dust Bowl
